Veal and spinach ravioli stuffing

2tablespoonsShallots, finely chopped
1teaspoonSage
¼teaspoonMace or nutmeg
½cupSpinach, chopped
½teaspoonBlack pepper
1tablespoonDry sherry
¼cupParmesan, grated

Directions

Place all ingredients in a large mixing bowl and combine thoroughly.

Fill ravioli with mixture.
