Tuna and caviar parfait

| 4 | ounces | Fresh ahi tuna; finely diced |
| 2 | dashes | Tabasco pepper sauce |
| 1 | tablespoon | Finely chopped chives |
| 1 | teaspoon | Olive oil |
| Salt and pepper to taste | ||
| 2 | ounces | Wasabi tobiko and/or osetra caviar |
| 1 | tablespoon | Whipped cream; unsweetened |
| 8 | Chives | |
Directions
GARNISH
In a well chilled bowl, mix tuna, Tabasco pepper sauce, chives, olive oil, and salt and pepper together. In a parfait glass, alternate layers of tuna mixture, wasabi tobiko and osetra caviar. Top with whipped cream and two chives.
Yield: 4 appetizer servings
