Tripe patties

1 | pounds | Boiled tripe |
1 | Egg | |
½ | cup | Bread crumbs |
½ | teaspoon | Onion juice |
1 | teaspoon | Salt |
1 | dash | Pepper |
Grind tripe and combine with remaining ingredients. Shape into patties and fry in greased skillet until browned. Variations- Make patties ½ inch thick and brown under low broiler heat.Baked Tripe with Bacon- Wrap each patty with slice of bacon and bake in hot oven (425 F.) 8 to 10 minutes, or until bacon is crisp. Tripe Fritters- Sift 1 c sifted flour with ½ tsp salt. Combine 1 c milk, 1 T melted shortening and 1 egg, slightly beaten. Add to flour and mix until smooth.
