Ingredients

5cupsBrown sugar
1teaspoonCayenne
2teaspoonsGinger
1tablespoonWhite mustard seed
1teaspoonCinnamon
1teaspoonTurmeric
1teaspoonSalt
12Tart pears (peeled & finely
Chopped)
3largesYellow onions (as above)
12Green tomatoes (as above)

Directions

Place first 8 ingredients in large kettle & bring to boil. Cook for 5 minutes & add remaining ingredients. Reduce heat & simmer over low heat for 30 minutes. Pack chowchow into sterile jars. Seal & process in a boiling water bath for 15 minutes.
