Tomato white wine sauce

1⅓ | cup | Fish or chicken stock |

1½ | cup | Tomatoes, peeled and seeded large garlic clove, |
⅓ | cup | Dry white wine Thyme salt and pepper to taste |
Directions
Simmer the shallots and garlic, in a saucepan with the stock or wine and herbs. When the liquid has reduced to about 2 tbs, in 5 minutes or so, stir in the tomatoes. Cover the pan for several minutes so the tomatoes render their juices, then uncover and boil several minutes until the sauce thickens to the consistency you want .
