Tofu with hoisin sauce

Measure Ingredient
½ cup Each red bell peppers strips and celery
1½ teaspoon Vegetable oil
1 teaspoon Minced pared gingerroot
1 small Garlic clove, minced
2 tablespoons Dry sherry
1 teaspoon Hoisin sauce
1 teaspoon Reduced sodium soy sauce
½ teaspoon Chinese sesame oil
½ pounds Firm-style tofu, cut into cubes
½ cup Sliced scallions, green portion only

In 1 qt microwaveable casserole combine pepper, celery, oil, gingerroot and grlic and stir to coat. Microwave on HIGH for 2 minutes, stirring once halfway through cooking. Add sherry, hoisin sauce, soy sauce, and sesame oil and stir to combine; microwave on HIGH for 1 minute. Add tofu and microwave on HIGH for 1 minute; sprinkle with scallions. 2 servings.
