Thai sticks

Measure Ingredient
2 pounds Chicken Breast;sliced, boned
1 cup Coconut Milk;unsweetened
½ cup Mango Chutney
¼ cup Peanuts;chopped, roasted
½ \N Jalapeno Pepper;seeded;
1 tablespoon Cilantro;chopped
1 tablespoon Mint;chopped
2 tablespoons Peanut Oil

Combine all ingredients except chicken in food processor or blender. Blend until smooth.

Thread thin sliced chicken breast pieces on skewers; place in a shallow dish. Pour marinade over chicken; refrigerate overnight.

Cook quickly on very hot barbecue or close to oven broiler.
