Ingredients

| 2 | pounds | Chicken Breast;sliced, boned |
| 1 | cup | Coconut Milk;unsweetened |
| ½ | cup | Mango Chutney |
| ¼ | cup | Peanuts;chopped, roasted |
| ½ | Jalapeno Pepper;seeded; | |
| 1 | tablespoon | Cilantro;chopped |
| 1 | tablespoon | Mint;chopped |
| 2 | tablespoons | Peanut Oil |
Directions
Combine all ingredients except chicken in food processor or blender. Blend until smooth.
Thread thin sliced chicken breast pieces on skewers; place in a shallow dish. Pour marinade over chicken; refrigerate overnight.
Cook quickly on very hot barbecue or close to oven broiler.
