1cupCoconut Milk;unsweetened
½cupMango Chutney
¼cupPeanuts;chopped, roasted
½Jalapeno Pepper;seeded;
1tablespoonCilantro;chopped
1tablespoonMint;chopped
2tablespoonsPeanut Oil

Directions

Combine all ingredients except chicken in food processor or blender. Blend until smooth.

Thread thin sliced chicken breast pieces on skewers; place in a shallow dish. Pour marinade over chicken; refrigerate overnight.

Cook quickly on very hot barbecue or close to oven broiler.
