1 cup | Coconut Milk;unsweetened |
½ cup | Mango Chutney |
¼ cup | Peanuts;chopped, roasted |
½ \N | Jalapeno Pepper;seeded; |
1 tablespoon | Cilantro;chopped |
1 tablespoon | Mint;chopped |
2 tablespoons | Peanut Oil |
Combine all ingredients except chicken in food processor or blender. Blend until smooth.
Thread thin sliced chicken breast pieces on skewers; place in a shallow dish. Pour marinade over chicken; refrigerate overnight.
Cook quickly on very hot barbecue or close to oven broiler.
