Thai fish sauce

| 1 | can | Anchovies, drained (2 oz) |
| 2 | Garlic cloves, lightly crushed | |
| ½ | teaspoon | Dark-brown sugar, packed |
| ¼ | teaspoon | Salt |
| 1¼ | cup | Water |
Directions
Place anchovies, garlic, brown sugar, salt and water in small saucepan. Simmer over medium-low heat 10 minutes without stirring.
Remove from heat, cool slightly, then strain through double layer of cheesecloth. Store covered in refrigerator up to 2 weeks. Makes about ¾ cup.
