Thai fish sauce

Yield: 1 cup

Measure Ingredient
1 can Anchovies, drained (2 oz)
2 \N Garlic cloves, lightly crushed
½ teaspoon Dark-brown sugar, packed
¼ teaspoon Salt
1¼ cup Water

Place anchovies, garlic, brown sugar, salt and water in small saucepan. Simmer over medium-low heat 10 minutes without stirring.

Remove from heat, cool slightly, then strain through double layer of cheesecloth. Store covered in refrigerator up to 2 weeks. Makes about ¾ cup.
