Thai fish sauce

1canAnchovies, drained (2 oz)
2Garlic cloves, lightly crushed
½teaspoonDark-brown sugar, packed
¼teaspoonSalt
cupWater

Directions

Place anchovies, garlic, brown sugar, salt and water in small saucepan. Simmer over medium-low heat 10 minutes without stirring.

Remove from heat, cool slightly, then strain through double layer of cheesecloth. Store covered in refrigerator up to 2 weeks. Makes about ¾ cup.
