Mix the sauce ingredients together. Mix the marinade together. cut the tofu into ½ inch slices and cover with the marinade. Leave for 1 hour.
Line a wok with foil and place the tea, rice and sugar in the base. Place a rack in the wok and lay on the drained strips of tofu.
