Ingredients

4 cups Boiling water or chicken
Stock
cup Bulgur
¾ cup Cooked chick peas
½ cup Fresh mint, minced
¾ cup Fresh parsley, minced
2 (or 3) chopped tomatoes
¼ cup Lemon juice
2 teaspoons Low sodium soy sauce
Sprouts or lettuce

Directions

Combine water and bulgur. cover and let stand bulgur is fluffy, 1-2 hours. Strain and squeeze out excess water. Combine with remaining ingredients except sprouts or lettuce, chill and serve over sprouts.
