Sweetcorn fritters

\N \N An egg
100 grams Self-raising flour
1 teaspoon Baking powder
3 \N Cobs of sweetcorn; stripped of kernels
1 tablespoon Fresh thyme leaves
\N \N Salt and freshly ground black pepper

1 Heat the oil for deep-frying in a heavy-based saucepan. Crack the egg into a bowl, and mix in the flour and baking powder together to form a batter.

2 Combine the corn kernels with the thyme leaves and add to the batter.

Deep-fry heaped spoonfuls of batter in the oil until golden. Drain well on kitchen paper. Serve with plantain salad.
