2Red peppers; deseeded, skinned

2Green peppers; deseeded, skinned

450gramsTomatoes; skinned and chopped
1teaspoonGregg's Ground Ginger
½teaspoonGregg's Mixed Spice
1teaspoonGround Gregg's Allspice
170gramsSugar
150millilitresWhite wine vinegar
115gramsRaisins

Directions

Saut‚ the onions in the olive oil for about 30 secs.

Add the green peppers, garlic, red peppers and the spices. Stir well.

In a separate saucepan heat the vinegar and sugar together for about 40 secs until the sugar is dissolved.

Add the raisins to the vinegar and sugar, stir then combine the two mixtures in one saucepan. Simmer for about two hours, stirring occasionally.

Pour into a clean, dry jar.

Cover and refrigerate.
