Sweet potato cashew bake

Ingredients

cupBrown sugar; packed
cupCashew nuts; broken
1teaspoonSalt; or to taste
½teaspoonGround ginger
6To 8 medium sweet potatoes; cooked and sliced
2cupsCanned peaches; drained and diced
¼cupButter or margarine

Directions

In a small bowl, blend brown sugar, cashews, salt, and ginger. In a 9 x 13-inch casserole, layer ½ of the potatoes, ½ of the peaches and ½ of the brown sugar mixture; repeat layers. Top with pats of butter or margarine. Cover with foil and bake at 350 degrees F. for 30 minutes. Uncover, and bake for an additional 10 to 15 minutes.

Garnish with additional peach slices if desired.
