Sweet and spicy stir-fry

1canDEL MONTE Pineapple Chunks In Its Own Juice, undrained
2teaspoonsVegetable oil
1largeRed or green pepper, cut into strips
1canDEL MONTE Cut Green Beans, drained (8 oz)
4Half boneless chicken breasts, skinned, cooked and cubed (from MEDITERRANEAN CHICKEN)
¾cupSweet and sour sauce
½teaspoonCrushed red pepper flakes
4cupsCooked rice

Directions

Prep time: 5 minutes. Cook time: 5 minutes.

1. Drain pineapple, reserving ⅓ cup juice.

2. In large skillet, heat oil over medium-high heat. Add pepper strips; stir-fry 2 minutes.

3. Add green beans, chicken, sweet and sour sauce, red pepper flakes, pineapple, and reserved juice; stir-fry 3 minutes or until heated through.

4. Meanwhile, place rice in microwavable dish; sprinkle with 2 teaspoons water. Cover with plastic wrap; slit to vent. Microwave on HIGH 4 minutes or until heated through. Spoon onto serving plate; top with chicken mixture.
