Sweet and sour spinach salad

Ingredients

1teaspoonDry mustard

¼teaspoonWhite pepper
½cupOlive oil
¼cupSugar
3tablespoonsRed wine vinegar
Juice of 1/2 lemon
1bunchSpinach, lg, stems discard torn into pieces
12White mushrooms, thin sliced
¾cupBacon, cooked, crumbled, about 1/2 lb

D'Amicos, Medina, OH Beat yolks in sm bowl until light and lemon colored. Add mustard, salt and pepper and blend well. Whisking constantly, add oil drop by drop, then in slow steady stream, until thickened. Stir in sugar, vinegar, and lemon juice, and mi well.

Place spinach in lg salad bowl. Add mushrooms and bacon and dressing.
