Strawberry jam with pectin

Ingredients

| 1 | quart | (950 ml) cleaned strawberries |
| 3 | eaches | To 4 tsp. (15-20 ml) liquid artificial sweetener |
| 1 | each | Package powdered pectin |
| 1 | tablespoon | (15 ml) lemon juice |
| Red food coloring as desired. | ||
Directions
Crush strawberries in 1-½ quart saucepan. Stir in artificial sweetener, food coloring, powdered pectin, and lemon juice. Bring to a boil and boil 1 minute. Remove from heat. Continue to stir 2 minutes. Pour into freezer containers, cover and freeze. Thaw before serving. Store in refrigerator after opening. Yield: About 2-⅔ cups (640 ml) 1 Tbsp. (15 mL) = 5 calories.
