Spinach latkes

Yield: 1 Servings

Measure Ingredient
¾ pounds Fresh spinach, -or-
1 pack (10 ounce) frozen spinach
3 \N Eggs beaten
6 tablespoons Matzo meal or bread crumbs
\N \N Salt and pepper to taste
3 tablespoons Grated onions
\N \N Oil, for frying

Wash and check spinach carefully. Steam in a tiny amount of lightly salted water for 5 minutes. Drain well. Chop. Mix with remaining ingredients and let rest for 10 minutes. Form patties. Drop by tablespoonful into hot oil and fry on both sides unt il golden brown.

Variation:

Leek pancakes -- Wash and thinly slice ½ pound of leeks. Proceed as above.
