Zucchini latkes

2tablespoonsWheat germ or matzo meal
5tablespoonsWhole wheat flour, sifted (up to 6)
3largesEggs, well beaten
½teaspoonSalt, or to taste
Generous pinch of pepper
2Cloves garlic, minced, -or-
¼teaspoonGarlic powder
Oil, for frying

Directions

>From _Classic Kosher Cooking_ by Sara Finkel Combine all ingredients, mixing well. Drop by tablespoonful into hot oil in a skillet and fry on both sides until golden brown. Yields 10-12 latkes.
