Spanish vegetable stew with squash

Ingredients

3largesOnions, chopped
4largesGreen bell peppers, chopped
4largesTomatoes, peeled & chopped
1poundsYellow squash, chopped
2mediumsPotatoes, cubed
5tablespoonsOlive oil
2eachesGarlic cloves, minced
2tablespoonsChopped parsley
teaspoonSalt

Directions

Heat oil & saute onions for a few minutes. Add remaining ingredients & a little water. Cover & simmer for 40 minutes, stirring occasionally.
