Spanish vegetable stew w/ squash

Ingredients

| 3 | larges | Onions, chopped |
| 4 | larges | Green bell peppers, chopped |
| 4 | larges | Tomatoes, peeled & chopped |
| 1 | pounds | Yellow squash, chopped |
| 2 | mediums | Potatoes, cubed |
| 5 | tablespoons | Olive oil |
| 2 | eaches | Garlic cloves, minced |
| 2 | tablespoons | Chopped parsley |
| 1½ | teaspoon | Salt |
Directions
Heat oil and saute onions for a few minutes. Add remaining ingredients and a little water. Cover & simmer for 40 minutes, stirring occasionally.
