Spam jambalaya

1canSPAM Luncheon Meat, cubed (12 oz)
1cupChopped onion
cupChopped green bell pepper
½cupChopped celery
2Garlic cloves, minced
1canTomatoes, cut up (14 1/2 oz)
1canLower sodium chicken broth (10 3/4 oz)
½teaspoonDried leaf thyme
8dropsHot pepper sauce
1Bay leaf
1cupLong grain rice
2tablespoonsChopped parsley

Directions

In large non-stick skillet or 3-quart non-stick saucepan, saute SPAM, onion, green pepper, celery, and garlic until vegetables are tender.

Add tomatoes, chicken broth, thyme, hot pepper sauce, and bay leaf.

Bring to a boil; stir in rice. Cover. Reduce heat and simmer 20 minutes or until rice is tender. Discard bay leaf. Sprinkle with parlsley.
