Ingredients

cupChopped green pepper
½cupChopped celery
2eachesClove garlic, minced
1canStewed tomatoes, 14-1/2 oz can
1canChicken broth
½teaspoonDried leaf tyme
6eachesDr hot pepper sauce
2eachesBay leaves
1cupRice
2tablespoonsChopped parsley

Directions

In large non stick skillet or 3-quart non-stick saucepan, saute spam luncheon meat, onion, green pepper, celery, and garlic until vegetables are tender. Add tomatoes, chicken broth, thyme, hot pepper sauce and bay leaves. Bring to a boil; stir in rice. Cover.

Reduce heat and simmer 20 minutes or until rice is tender. Discard bay leaves. Sprinkle with parsley.
