1 | cup | Chopped onion |
⅔ | cup | Chopped green pepper |
½ | cup | Chopped celery |
2 | eaches | Clove garlic, minced |
1 | can | Stewed tomatoes, 14-1/2 oz can |
1 | can | Chicken broth |
½ | teaspoon | Dried leaf tyme |
6 | eaches | Dr hot pepper sauce |
2 | eaches | Bay leaves |
1 | cup | Rice |
2 | tablespoons | Chopped parsley |
Directions
In large non stick skillet or 3-quart non-stick saucepan, saute spam luncheon meat, onion, green pepper, celery, and garlic until vegetables are tender. Add tomatoes, chicken broth, thyme, hot pepper sauce and bay leaves. Bring to a boil; stir in rice. Cover.
Reduce heat and simmer 20 minutes or until rice is tender. Discard bay leaves. Sprinkle with parsley.
