Sole with mushrooms

1cupSliced mushrooms
2tablespoonsMinced shallots
2tablespoonsChopped parsley
½teaspoonSalt Pepper to taste
poundsSole fillets
½cupDry white wine
2tablespoonsFlour
2tablespoonsButter, softened eavy whipping cream (2-4 tb)

Directions

Preheat oven to 350. Mix mushrooms, shallots, parsley, salt and pepper together in bowl. Spread mixture in bottom of greased, shallow baking dish. Place fish fillets over mushrooms. Add enough wine tocover bottom of dish. Bring to a simmer on stovetop. Cover baking dish with Mix flour and butter together. Boil pna juices from fish until reduced by half. Stir butter-flour mixture into reduced pan juices; cook over low heat, stirring constantly, until thickened.
