Sole filet with cream

Ingredients

6Filets of Sole, or flounder
2tablespoonsButter
¼poundsMushrooms, sliced
1Shallot, chopped
1cupHeavy cream or creme fraiche
Salt and pepper, to taste
1teaspoonOlive oil
Juice of 1/2 lemon
2tablespoonsParmesan cheese, grated

Directions

Wash filets and season with lemon and salt. Cook mushrooms and shallot in butter until liquid has evaporated. Stir in cream. Season with salt and pepper. Place fish in an oiled baking dish. Cover with sauce. Sprikle parmesan Bake in 350 degree oven for 25 mins.

Suggested Wine: Any dry white wine Serving Ideas : Seve with broccoli with brown butter sauce or mashed potato NOTES : This is a very easy and delicious fish recipe if you don't mind the calories and fat.
