Yield: 8 Servings
|2||Egg yolks; beaten|
|1 cup||Crushed pineapple|
|1 cup||Chopped pecans|
|1 cup||Crushed vanilla wafers|
Cream together sugar & butter. Add eggs, pineapple, nuts & crushed vanilla wafers. Mix well. Take 4 large sugar cookies & spread mixture on top of each, then stack. Chill thoroughly. About 1 hour before serving, cover each stack with whipped cream. Sprinkle with coconut & top with a cherry. Keep in refrigerator until ready to serve. (Snowballs are better if you stack cookies & chill overnight.)
