Smoked turkey and rice salad

1cupRice, cooked and cooled
½cupLow fat yogurt
¼cupMayonnaise
teaspoonDried tarragon
1teaspoonDijon mustard
½teaspoonPepper
½teaspoonSugar
Salt to taste
2eachesThick slices smoked deli turkey breast, cut into strips
1cupFrozen peas, thawed
1smallTomato, chopped
1smallSweet yellow pepper, chopped and seeded
4eachesGreen onions

Directions

PREP TIME: 10 MINUTES

COOK TIME: 20 MINUTES

In small bowl, whisk together the mayonnaise, yogurt, tarragon, pepper salt, mustard and sugar. In salad bowl, toss together the rice, turkey, peas, tomato, peppers and onions.
