Smoked turkey and rice salad

Yield: 6 servings

Measure Ingredient
Makes 6 servings
1 cup Rice, cooked and cooled
½ cup Low fat yogurt
¼ cup Mayonnaise
1½ teaspoon Dried tarragon
1 teaspoon Dijon mustard
½ teaspoon Pepper
½ teaspoon Sugar
Salt to taste
2 eaches Thick slices smoked deli turkey breast, cut into strips
1 cup Frozen peas, thawed
1 small Tomato, chopped
1 small Sweet yellow pepper, chopped and seeded
4 eaches Green onions

PREP TIME: 10 MINUTES

COOK TIME: 20 MINUTES

In small bowl, whisk together the mayonnaise, yogurt, tarragon, pepper salt, mustard and sugar. In salad bowl, toss together the rice, turkey, peas, tomato, peppers and onions.
