Smoked salmon fettuccine

Yield: 6 servings

Measure Ingredient
125 grams Fresh or frozen peas
¼ cup White wine
1¼ cup Thickened cream
8 slices Smoked salmon
3 \N Spring onions; finely chopped
\N \N Freshly ground black pepper; to taste
500 grams Fettuccine

1. Blanch peas in boiling water for 2 minutes. Refresh under cold running water, drain and set aside.

2. Place wine in a large frying pan and bring to the boil. Stir in 1 cup cream and boil until sauce reduces and thickens.

3. Place 4 slices smoked salmon, spring onions and remaining cream in a food processor. Process until mixture forms a puree. Stir smoked salmon mixture into sauce and cook until sauce is hot.

4. Cut remaining salmon slices into strips. Add salmon strips and peas to sauce. Toss well and season to taste with black pepper 5. Cook fettucine in boiling water in a large saucepan following packet directions. Drain well. Spoon sauce over fettuccine and toss to combine.

Serve immediately.
