Smoked ham and calendula roll-ups

| 1 | tablespoon | Horseradish |
| 3 | teaspoons | Lemon juice |
| 2 | tablespoons | Sweet pickle relish |
| 1 | Apple; tart, cored, peeled, | |

| 1 | cup | Calendula petals; washed |
| 4 | Flour tortillas; 12-inch | |
| 8 | ounces | Smoked ham; wafer-thin slice |
| Lettuce leaves | ||
| Calendula petals for garnish | ||
Directions
Blend the cream cheese with the mayonnaise, horseradish, lemon juice and pickle relish in a bowl.
Gently stir in the apple and calendula petals.
Using a spatula, spread the mixture evenly over the entire surface of each tortilla.
Cover with a single layer of ham. Roll up, jely-roll style.
Tightly wrap each in plastic wrap and chill until serving time.
To serve, cut roll-ups to desired thickness.
Arrange on a serving platter over a bed of lettuce leaves. Sprinkle with additional calendula petals.
