Skillet buttermilk biscuits

Ingredients

4 | cups | Vegetable Oil |
1 | cup | Whole Wheat Flour |
1 | cup | All Purpose Flour |
1½ | teaspoon | Baking Soda |
¼ | teaspoon | Salt |
¼ | cup | Vegetable Shortening |
¾ | cup | Buttermilk |
Directions
Pour 1" of oil into a medium size skillet. Heat to 370 degrees. Combine the flours, baking soda and salt in a large bowl. Cut in the vegetable shortening until the mixture resembles coarse crumbs. Add the buttermilk.
Mix lightly with a fork until the mixture clings together and forms a soft ball of dough. Break off pieces of the mixture, 1 per finished roll. Roll each piece into a 1" ball. Flatten the balls. Fry the biscuits until golden on each side (3-4 minutes total). Drain on paper towels. Serve warm.
