Simple greek spinach pie

| 9 | ounces | Frozen spinach; thawed and drained |
| ½ | cup | Scallions; chopped |
| ½ | cup | Cottage cheese |
| 1 | tablespoon | Unsalted butter |
| 1 | cup | Milk |
| ½ | cup | Buttermilk baking mix |
| 3 | Eggs | |
| 1 | teaspoon | Lemon juice |
| ¼ | teaspoon | Nutmeg |
| 3 | tablespoons | Grated Parmesan cheese |
Directions
Prep: 10 min, Cook: 40 min.
Preheat oven to 350øF. Layer spinach, scallions and cottage cheese in a greased baking dish. Combine remaining ingredients in a food processor or blender. Season with salt and pepper to taste. Blend until smooth and pour over cheese mixture. Bake 35-45 minutes, or until a knife inserted in center comes out clean.
