1½ pounds | Shrimp, clean & devein |
2 cups | Grated bread crumbs |
4 tablespoons | Grated Parmesan |
1 cup | Cooked rice |
6 \N | Bell peppers |
Make sauce: Combine tomatoes, onion, garlic, salt and pepper. Simmer together for 45 minutes and set aside. Make stuffing: Saute' onions, celery and garlic in pan with oil for about 10 minutes. Add shrimp, chopped in small pieces. Simmer about 30 minutes. Season to taste.
In a separate bowl, combine bread crumbs and cheese. Pour shrimp mixture into crumbs and mix well. Mix in cooked rice. Stuff peppers and arrange in baking dish. Pour sauce in dish and bake at 350 degrees for about 1 hour. Submitted By BOBBI ZEE On 10-24-94
