Sherry chicken with vegetables

Ingredients

2Chicken breasts; sliced at an angle against grain
3tablespoonsSherry
1teaspoonCorn starch
Salt; to taste
20Snow peas
1canBamboo shoots; sliced
8largesBlack mushrooms; sliced thick
1canWater chestnuts; sliced
2Stalks green onions; sliced in 2 inch pieces
3Cloves garlic; cut in two or three
Vegetable oil

Directions

Mix chicken meat with sherry, corn starch and salt, set aside. Heat two tbsp oil in frying pan. Toss in garlic and onions and stir fry for thirty seconds. Add chicken and stir fry until just done. Remove from pan. Heat two more tbsp oil in frying pan and add snow peas and stir fry until almost bright green. Add other vegetables and meat. Stir fry until meat is done.

Notes Sometimes my mother has added sliced carrots or other vegetables to this recipe. I usually use what is on hand.
