|2 cups||Chicken broth|
|1 cup||Tomato or vegetable juice|
|¼ cup||Long grain rice|
|½||Boneless chicken breast; cooked, cut into 1/2 inch dice|
|Green onion; thinly sliced|
Bring broth, juice and rice to a boil and simmer for 15 minutes. Add cooked chicken and simmer 5 minutes longer. Ladle out and garnish with green onion.
