Seafood stuffing for salmon

Ingredients

2mediumsOnions, minced
cupMushrooms, finely chopped
3eachesClove garlic, crushed
2mediumsBunches parsley, chopped
½cupFine bread crumbs
4ouncesCrabmeat, cut in small pieces
4ouncesShrimp, shelled and deveined, cut in smalll pieces
4ouncesScallops, cut in small pieces
2teaspoonsLemon juice
¼teaspoonCayenne
Salt and pepper to taste

Directions

Melt butter in med. saucepan, then add onions and mushrooms, saute until soft. Then add garlic, and saute until tender, but not browned. Add parsley and remove from heat.

Stir in bread crumbs, and add assorted seafood, lemon juice, cayenne and salt and pepper.

Fill salmon with mixture and bake as directed. Source: Official Expo 86 Cookbook
