Scallion puree

Measure Ingredient
½ cup Olive oil
2 cups Scallions greens,
(about 1 bunch)
Chopped and patted dry

In a saucepan heat ¼ cup olive oil over moderate heat and cook scallions just until tender and bright green (do not let brown). In a blender puree scallion mixture with remaining ¼ cup olive oil until smooth. Season with salt and pepper and let cool. Use to garnish soup.

Makes about ¾ cup.
