Sage and apple potatoes

1⅜ kilograms Potatoes; peeled and thinly
\N \N ; sliced (3lb)
4 \N Granny smith apples; peeled, cored,
\N \N ; halved and thickly
\N \N ; sliced
1 \N Handful fresh sage leaves
1 \N Onion; finely chopped
\N \N Knob of butter
225 \N Ml; (5 1/2fl oz) double
\N \N ; cream
\N \N A little freshly grated nutmeg
\N \N Freshly ground salt and black pepper

Pre-heat the oven to 190øC/375øF/gas mark 5 Par-boil the potatoes and drain well. Layer the potatoes and onion in a well greased gratin dish with some seasoning and a few torn sage leaves.

Melt the butter in a frying pan and add the apples, turning them just to coat them in butter and then top the potato with overlapping slices of apple. Beat the cream with the seasoning and nutmeg and pour over the apple in the dish.

Bake for about 30 to 40 minutes until the potatoes are cooked, test with a skewer. Give the dish a quick flash under the grill if necessary (or blast with a blow torch) to give a golden nutty flavoured topping.
