Ingredients

2teaspoonsGrated fresh ginger root
3Garlic cloves, minced
6Whole cloves
¼teaspoonCayenne pepper
poundsFresh spinach, washe removed, and choppe
4tablespoonsPlain whole-milk yog
¼teaspoonSalt
Freshly ground peppe

Directions

Heat the oil in a large suacepan. Add the onion, and fry for 3 minute Add the ginger root and garlic, and continue to cook, stirring, for 2 mintues more. Add the cloves and cayenne and mix well. Stir in the spinach. Add the yogurt, one tablespoon at a time, blending well befo adding the next one. Reduce heat to low, cover, and cook for 2 minute Sprinkle with salt and pepper, mix, and serve.
