Runner beans with tarragon cream

1250 gram pac runner beans; trimmed
15gramsButter; (1/2oz)
1bunchSalad onions; trimmed and sliced
1142 millilit soured cream; (5fl oz)
3tablespoonsFreshly chopped tarragon
Salt and freshly ground black pepper
1Sprigs tarragon

Directions

TO GARNISH

Cut the beans into 2. 5cm (1 inch) pieces on the diagonal. Cook in boiling water for 7 minutes until tender. Drain and keep warm.

Melt the butter in a saucepan and saute the onions for 3-4 minutes. Stir in the cream, tarragon, cooked beans and add seasoning to taste. Do not allow to boil.

Spoon into a warmed serving dish, garnish with the sprigs of tarragon and serve with grilled meats or fish.
