|3 pounds||Boneless loin of pork|
|1 tablespoon||Fresh rosemary leaves|
|5 \N||Garlic cloves, cut into slivers|
|¼ cup||Olive oil|
Trim all fat from the pork. Using a paring knife, cut small deep slits on all sides of pork and insert rosemary leaves and garlic.
Place the meat in a roasting pan, rub with olive oil and season with salt and pepper.
Roast the pork in a 325'F. oven for 1½ to 2 hours, or until a meat thermometer reads 160'F. Let stand 20 minutes before slicing.
