Roasted boneless loin of pork

Yield: 8 servings

Measure Ingredient
3 pounds Boneless loin of pork
1 tablespoon Fresh rosemary leaves
5 \N Garlic cloves, cut into slivers
¼ cup Olive oil
\N \N Salt
\N \N Pepper

Trim all fat from the pork. Using a paring knife, cut small deep slits on all sides of pork and insert rosemary leaves and garlic.

Place the meat in a roasting pan, rub with olive oil and season with salt and pepper.

Roast the pork in a 325'F. oven for 1½ to 2 hours, or until a meat thermometer reads 160'F. Let stand 20 minutes before slicing.
