Roast pork (lechon)

Yield: 1 Servings

Measure Ingredient
1 \N Whole garlic clove
1 tablespoon Oregano
1 \N Tbsp.salt
½ cup Lime juice
1 tablespoon Onion flakes (or 1 med. onion)
½ large Green pepper

Plug pork roast with garlic clove Combine other ingredients and merinate roast for at lease one hour. Brown pork roast in small amount of olive oil on all sides add about 2 inches of water and the remains of merinate cook covered until roast is done.


bake with merinate in over 325 degrees until done. Remove cover the last 15 minutes to brown.

Delicious served with rice and beans.
