Roast garlic with maytag blue cheese and olives

Yield: 2 servings

Measure Ingredient
2 \N Whole garlic bulbs; plus 1 small garlic
\N \N ; clove, minced
\N \N Olive oil
\N \N Salt and pepper
2 slices Potato bread
2 ounces Maytag blue cheese; sliced in 4 pieces
8 \N Olives
1 \N Scallion; thinly sliced
2 \N Sprigs thyme

Remove outside papery layer from garlic bulbs, leaving cloves attached. Rub with olive oil, salt and pepper. Place on a small baking sheet and bake at 350 degrees for 20 to 25 minutes or until very soft. Mix minced garlic with a little olive oil and brush on bread. Grill or toast until golden and slice in half. Top with a slice of cheese. Cut off top of garlic bulbs and discard. Place garlic on 2 small plates and serve with cheese toasts.

Scatter olives and scallions over plate and garnish with thyme.
