Roast chicken wings with black bean sauce

Measure Ingredient
960 grams Chicken wings
1 tablespoon Black bean sauce
1 tablespoon Light soy sauce
1 teaspoon Sugar
3 \N Garlic cloves; finely chopped
4 smalls Fresh red or green chillies; finely chopped
½ teaspoon Ground white pepper

Remove the final fingertip of the wings and the arm bone (the one closest to the body). In a roasting dish, mix all the ingredients, ensuring that the chicken wings are well coated. Leave to marinate for at least 1 hour.

Preheat the oven to 180C/350F/gas 4.

Arrange the wings on to the boned bases with the bone in the centre as below. Roast the chicken wings for about 30 minutes.
