Rice and vegetables in wine

Ingredients

| 2 | tablespoons | Vegetable oil |
| 1 | Onion; chopped | |
| 1 | medium | Zucchini; chopped |
| 1 | medium | Carrot; chopped |
| 1 | each | Celery stalk; chopped |
| 1 | cup | Long grain rice |
| 1¼ | cup | Vegetable stock or water |
| 1 | cup | White wine |
Directions
Heat the oil in a saucepan and saute the onion. Add the rest of the vegetables and stir them over a medium heat until browned.
Add the rice, vegetable stock and white wine, cover and cook for about 15-20 minutes until all the liquid has been absorbed.
30 minutes to make. Good source of vitamin A.
