Ingredients

3mediumsAll-Purpose Potatoes; Diced
1mediumOnion; Sliced In Circles
1Clove Garlic; Minced, To 2 Cloves
1tablespoonI Can't Believe It's Not Butter - Light, Or Margarine
teaspoonDried Thyme
1teaspoonDried Oregano
½teaspoonDried Rosemary; Crushed
Salt And Pepper; To Taste
1tablespoonDried Parsley
1teaspoonDried Marjoram
3Eggs
½cupEgg BeatersĀ® 99% Egg Substitute

Directions

Dice potatoes and put into salted boiling water till they are soft but not falling apart.

Slice onion in rings and separate.

Heat nonstick skillet on stove and when hot put in I Can't Believe It's Not Butter - Light (or your choice of margarine), saute onion till translucent.

Add minced garlic and potatoes. Add spices (you can substitute your preferences). Heat all way thru (can continue to cook till the potatoes start to have a little color).

In a separate bowl, mix the eggs and egg beaters together till well blended. Add to skillet and cook till done.
