3Red potatoes; chopped
1Red beet; chopped fine
1Red onion; chopped
1Carrot
2Cloves garlic; minced
½teaspoonCrushed red chili peppers
1tablespoonDill weed
1Lemon ; juice of
½cupRed miso
½cupVeggie juice; (organic)

Directions

Bring water and lentils to a boil. Scrub but don't peel veggies before chopping; buy organic veggies when possible. Add potatoes, beet, onion, carrot, garlic, peppers and dill. Simmer for 20 minutes or till potatoes are tender. Mash miso and juices together and add after removing the soup from heat and just before serving.
