Raisin macaroons

Yield: 60 Servings

Measure Ingredient
4 Eggs; separated
¼ teaspoon Salt
1½ cup Sugar
3 cups Coconut
1½ cup Flour
1½ cup Raisins
1 teaspoon Coconut extract

Preheat oven to 350° Spray cookie sheets with Pam Beat egg whites with sugar and salt until stiff, set aside. In large bowl, mix together yolks and coconut, stir in extract, flour and raisins until well mixed. Fold in whites. Drop by spoonfuls on cookie sheets and bake for 10-15 minutes.
