Directions
TOPPING
In a small bowl, combine flour, baking powder and salt if desired; mix well. Add egg yolks and milk; mix well and set aside. In a small mixing bowl, beat egg whites until foamy. Gradually add sugar, beating until stiff peaks form. Fold in yolk mixture and lemon juice.
Pour into a greased 1½ qt. shallow baking dish. Arrange apple slices on top. Combine sugar and cinnamon; sprinkle over all. Bake uncovered at 375 deg. for 18 to 20 min. or until a knife inserted near the center comes out clean. Serve immediately. Yield: 2 servings. Diabetic Exchanges: One serving (prepared with skim milk and without salt) equals 1 starch, 1 meat, ½ fruit; also 193 calories, 148 mg. sodium, 214 mg. cholesterol, 26 gm carbohydrate, 9 gm protein, 6 gm fat.
