Pressure chicken stock m&m

Yield: 2 Quarts

Measure Ingredient
1½ pounds Chicken parts
2 quarts Water as min.
1 teaspoon Salt
1 \N Onion, peeled and sliced
1 \N Carrot, sliced
2 tablespoons Sherry
1½ tablespoon Veg. oil

Wipe chicken pieces with damp cloth and dry; place in cooker and add water.

Add salt ,onion and carrot. Add celery. Bring to boil then skim. Cover and set control at 15. Cook over high heat till pressure is reached.

Reduce heat; cook 15 min. Cool cooker naturally. place under running water to cool.
