Microwave chicken stock (traditional)

Yield: 3 servings

Measure Ingredient
3 pounds Chicken parts
1 Carrot, chopped coarsely
1 small Onion, quartered
2 Stalks celery, chopped coarsely
½ cup Minced fresh parsley
1 Bay leaf
4 Peppercorns
¼ teaspoon Dried thyme
4 cups Water

Place all of the ingredients in a 3-quart microwave-safe bowl. Cover and cook on high power for 20 minutes; skim. Cook for on medium power for 1 hour. Strain.

Makes 3 cups.
