2 \N | Stalks celery, chopped coarsely |
½ cup | Minced fresh parsley |
1 \N | Bay leaf |
4 \N | Peppercorns |
¼ teaspoon | Dried thyme |
4 cups | Water |
Place all of the ingredients in a 3-quart microwave-safe bowl. Cover and cook on high power for 20 minutes; skim. Cook for on medium power for 1 hour. Strain.
Makes 3 cups.
