Microwave chicken stock (traditional)

Ingredients

1Carrot, chopped coarsely
1smallOnion, quartered
2Stalks celery, chopped coarsely
½cupMinced fresh parsley
1Bay leaf
4Peppercorns
¼teaspoonDried thyme
4cupsWater

Directions

Place all of the ingredients in a 3-quart microwave-safe bowl. Cover and cook on high power for 20 minutes; skim. Cook for on medium power for 1 hour. Strain.

Makes 3 cups.
