Powter carrot cake with applesauce

Measure Ingredient
1½ cup Flour
½ cup Whole grain pastry flour
1 cup Sugar
2 teaspoons Baking soda
1½ teaspoon Cinnamon
½ teaspoon Nutmeg
½ teaspoon Salt
1 cup Applesauce; unsweetened
2 tablespoons Canola oil
2 \N Egg whites
2 \N Whole eggs
3 cups Grated carrots

Preheat oven 350.

In mixing bowl, mix first 7 ingredients (dry). In another bowl, mix together applesauce, oil, egg whites, eggs. Add the mix slowly to dry ingredients.

Beat together until well mixed. Add carrots and mix until they are integrated.

Pour into a loaf pan and bake in oven 1 hour and 10 mins, or until a toothpick inserted in center comes out clean. turn cake out onto a rack to cool.

Option--for non fat icing, use nonfat cream cheese, powdered sugar, nonfat milk, and vanilla extract for thick, or use powdered sugar, milk and vanilla for thin
